4:30 - Olive Oil Pairing
Starring: Texas Hill Country Olive Oil
Texas Hill Country Olive Company is a family run artisanal olive orchard that produces and sells high quality extra virgin olive oil. Texas Hill Country Olive Company also has a unique program that allows consumers to adopt an olive tree. Orchard patrons who adopt an olive tree for a year reap the rewards from that tree — high-quality, cold press, organically grown extra virgin olive oil, and have the option to have their olive oil bottles affixed with custom labels.

Texas Hill Country Olive Company cultivates and mills olives and bottles the olive oil on-site at the orchard. They have three specialty blends: Terra Verde, Texas Hill Country, and Sola Texas Hill Country Olive Company provides high-quality olive oil to consumers as well as chefs, health and fitness professionals, high end culinary/specialty retailers and gift seekers. The idea to offer individuals an opportunity to adopt an olive tree in the Texas Hill Country was conceived by John Gambini in 2008. Together with the Mensik Family, John turned that idea into a reality.

Texas Hill Country Olive Company's mission is to provide the highest quality, organically grown extra virgin olive oil in Texas and to educate consumers why it is just as it was over two thousand years ago; olive oil is one of the most important food choices a person can make for not only their health, but their family's as well. Texas Hill Country Olive Company is located in Dripping Springs.

Sean Fulford, who the Austin American Statesman touted as one of The Best New Chefs in 2005, is the Executive Chef at The Bistro at Flat Creek. Having spent over 15 years perfecting his skills both locally & around the globe, he returns to the Hill Country with a beautiful menu featuring Texas Tuscan Cuisine to compliment Flat Creek's award-winning wines. Fulford already enjoys a substantial local following, having previously cooked downtown at Eddie V's, and acting as Executive Chef of both Vin Bistro & The Austin Club. Following a year abroad at The Pacific Island Club, a 5-star resort in Guam, there was a brief stint consulting on restaurant concepts & cooking in prviate homes in Houston. However, the allure of hanging his chef coat at the winery was just too good an offer to resist.

4:30 - Guest Chef Demonstration
Starring: Chef Jordan Russell of Forage Super Club
Jordan Russell is a chef, music lover and a self-proclaimed nomad. Russell has landed back in California to enjoy the year-round growing season and to take advantage of the endless supply of farm-fresh produce. He has traveled throughout the country in pursuit of new experiences and inspiration for life and food. His travels have taken him through Honolulu, Austin, San Francisco, South Florida and San Diego.

After working in restaurants for most of his childhood, he received his formal training at the California Culinary Academy in San Francisco. He has trained in kitchens across the United States, including Spice Creek Café, under renowned chef, Rebecca Stewart and Jsix in the Gaslamp District of San Diego.

After years of restaurant work, Russell sought to broaden his horizons in the culinary field. He began cooking privately for a range of clients in Northern California and Central Texas. His clients ranged in lifestyle, from families to elite professional athletes.

It was in Austin, TX that he found his calling for working with farmers and embracing sustainable agriculture. There he worked with non-profit organizations including the Sustainable Food Center, Slow Food Austin, and the Texas Hill Country Wine Association.

After spending time learning about sustainable farming and harvesting raw ingredients, Russell’s philosophy on traditional cooking and conventionally grown ingredients changed. Russell’s cooking is now deeply rooted in the use of exceptional raw products. Although trained in classical techniques, he has adapted a more modern approach to his food by utilizing new techniques and ingredients. His food has been called "rustic food, refined". Russell feels constantly spoiled by the abundance of exceptional ingredients that are at his fingertips.

Russell has launched The Forage Supper Club not as a job, but a celebration of life in California.
